There's really nothing to understand. Shimano is not in the chicken race for the lightest product and never will be. Japanese engineers still rely on old English BSA because it's the gold standard. Cranks are made of aluminum with forged steel chain rings and carbon wheels have aluminum brake track. Weight is important but they don't prioritize it over functionality, longevity and reliability.

There are many ways to lighten up those kits as well. The jagwire shift and brake kits are tanks compared to what else is available and there is a fair bit of tuning that can be done to each kit but not the each kit would be able to have the same tuning. So again there is a fair bit of extras you can trim off. Like running 1x on eTap and not even using the shifters and just using the BLIPBOX and some BLIPS or CLIKs which is an even lighter set up.
