Only problem with that is...before the pandemic...tires were usually available and heavily discounted. I myself got used to that and paying $100US for one tire seems a bit much. Even less expensive Schwalbe Pro Ones are difficult to find in a size 30mm tanwall.

My rear GP5000 S TR died yesterday, due to a 8mm sidewall slash during a weekend travel. Even dynaplug can't save it, so I put in a tube, riding at 50 psi to hotel. Sadly there was a second tiny cut at the tread side, resulting in a slow leak of tube. I found the tiny hole today morning. Gadly it was a slow leak that I could reach hotel...

You keep saying that. If you don't like it buy a cheaper tire.
I haven't bought any.
I did buy the gp5ktl.
Spent years on gp4k.
Yeah they are good tyres.
Unfortunately if people keep buying them in record numbers the price, for a quick wearing consumable, (they don't last like a car tyre) is going to stay high and it is likely other brands will see the profit being made and charge similar.
Already happening.

My rear 25mm got 3700mi at mostly race pace before threads started to poke through the center of the tread.

I suspect if people don't buy them at volume then it's more likely production will be scaled back and prices will stay high as supply remains constrained. Healthly markets tend to have supply balanced with demand, we are currently in a world where supply is constrained which is driving the prices.

Maybe new vs. used/streched tires?

Hmmm... a conundrum.....So if I want to stay in line with the 105 rule with the AR56, which is 23mm internal and 30mm external, I probably need to go with 25mm tires. Of course Continental recomends a max internal rim width of 21 for 25mm tires. I was hoping to go with 28c GP5000S-TRs.

25mm Continental GP5000 clincher non tubeless run slightly bigger than GP5000s TR 25c.
It's just the right size for AR56.

Use latex tube and it's faster too.

I do have a 700x25 GP5000 with a latex tube on the "old" wheels (19mm internal) that are being replaced by the AR56's (23mm internal) that I could move over. It's got 2,100 miles (3,500km) on it but it still looks like new (being on the front). My rear is a 28c, which has 2,700miles (4,300km) and is probably over 50% worn and a little cut up, but I do have a brand new 28c that I could use on the back.

Is latex in a GP5000 really faster than the tubeless S-TR? I thought they were pretty much the same rolling resistance.

Depend on the testing set up.

Using very minimal sealant like on BRR: S-TR has pretty much the same rolling resistance.
Using usual amount of sealant: GP5000 latex is still a tiny (negigibly) faster.
