10 speed mtb with road cassette

You might not like the range on the cassette but there's no reason that it wouldn't work. All SRAM and Shimano 10-speed consumable bits (chains, cassettes) are interchangeable. There are performance trade-offs but God help me, I've never noticed them.

Yes, to a degree. Using a large 10 speed road cassette will keep the top jockey close enough to the large sprocket.
Going to something like 11-21 will make the shifting pretty crappy, especially when you start to wear the chain.
I used to use a 12-27 on 9 speed (still do actually) as this works well, small enough gaps to be useable and still the same XTR shifting. the 11-21 i tried was dire.
