For the moment I ran into a new dilemma: either stock polished alu 2010 Chorus brakes, or wait for the 2011 black Chorus brakes and have them customized with one celeste arm (silimar to the custom Campa brakes on Valverde's mount)

Because I have my doubts between going for "2011" or sticking to my original idea of a more classic look.

Interesting point, with the very nice paint that you have with the original placement of the decals...about wanting to maintain a classic look.
That said, given the stated preference for celeste overload...I think the black and celeste arms will still fit in nicely and be a nice detail that few other bianchi owners will have. Arguably, you also have a very modern integrated bar/stem combo.
I have 3 bianchis plus my wife's. One is a white mono-q with only a few celeste accents and it's the one I'm considering getting rid of.

It's not like the headset or derailleurs are black and/or celeste. If anything, painting your brakes might garner unnecessary attention. Here's one vote for leaving them. Looks perfect.
