Interesting project. I did the same 2 years ago with a pair of adidas kicks, during my internship with the three stripes. Couldn't find any picture right now.
Not sure if you already tried them, but my shoes weren't usable for cycling in the end. the sole was plenty stiff and the bond between sole and upper was strong, but the upper material was to flexible. When pulling hard on the pedal the material stretched a lot, as it wasn't made for this kind of load.
