I want to build up a set of climbing wheels for the mountain days. Currently, I am running 55 deep F/R. These will be rim brake wheels BTW. The front gets a little twitchy at speed in the wind. Would a 40/50 deep wheelset make sense? Is 10mm too large of a gap between the front and rear wheels? Suggestions, experiences?
10 is not too large, but aside from depth, shape also matters as well as your weight (generally) and comfort level in crosswinds. I've had some wheels in the 40depth range that I dont like and I'm 83kg and will ride 60+ on the front often.

The wheels will be from BTLOS, the same as my current set of wheels 55/55. I will be using their carbon spoke/hub option. 40/50 set of wheels will be in the low 1200g range. I am kind of limited on the rim width, any wider the tire will be very close to the inner chain stays. The 55 are stable enough, only on fast descent do they start to tug at the bars. I really just want to drop some weight. Maybe 40/45, not sure 5mm will make much difference anywhere though.

Why choose such an outdated rim? It's very narrow, that won't help stability

I have about 5mm clearance on the drive side and 3mm clearance on the non drive side, tire to chainstay. Current wheels are 26 wide x 19 internal with 28c veloflex that inflate to 27.9mm.

If your frame can clear a 27.9mm tire as measured it will likely handle a 28mm external width rim with 21mm internal without any issues, allowing you to select a more modern profile that can better handle the wind. I can't comment how well the following wheels are in terms of aerodynamics but I am extremely pleased with my Farsports Kaze wheels. I got them in the 35mm depth with 21mm internal and 28mm external and DT Swiss hubs. Solid build, look great, and lightweight. You can get them in 45mm depth too. My tire clearance in my rim bike only allows for 25mm tires but the 28mm external width rims fit just fine.
