Not pictured with the final saddle as I need a replacement clamp kit to fit the rails, and some lightweight skewers are on their way as well; once I realised I was looking at a lower than anticipated weight I decided to use the minor contingency budget to get as close to 6.8kg as possible.
All weights verified by my kitchen scale (except for the skewers as they're in transit)...

Seat height, measured along the seattube, is 79.5cm.
The reason I went for the 59 compared to the 57 was the increased stack height.
Storck Fenomalist, 59cm, including seatpost collar, rd hanger and bottle cage bolts: 1089gr.
The dog paying close attention as well:
Storck Stiletto 300, original weight: 372gr.
Ended up being 358gr after cutting to length
Weight includes two fork crowns, fork required smallest one, saved 5gr.
Topcap and expander:
SRAM Red Black, including uncut inner cables, 326gr.
Shifters only, without cables, 299gr.
SRAM Rival, stock standard, 89gr.
With Token chain catcher, and a replacement aluminium fixing bolt, 91gr.
SRAM Force, 173gr.
KMC X10SL, 252gr uncut.
Ended up as 239gr after cutting some links.
SRAM RED Black, 175mm, 53x39, GXP, 679gr.
SRAM RED Blackbox GXP (ceramic), including spacers, 113gr.
Spacers not required on road bike, saves 4gr.
Planet X Ultra Light CNC, including pads and holders, 204gr.
Yellow King pads (for carbon wheels) increase the weight by 9gr.
Gore Ride-On, stock SRAM stuff, uncut, excluding shift inner, 228gr.
After cutting everything to length, total inner (incl shifter) + outer cable weight totals 170gr.
Selle Italia Flite 316, 202 gr.
Ritchey WCS 1-bolt alu, 221gr.
Had to replace bolt kit (saddle has oval rails), this increased the weight by 1 gram, but cutting the seatpost down saved 18. Total current weight: 204gr.
Ritchey WCS Classic 420mm, 248gr.
Ritchey WCS C-260 120mm, 111gr.
Deda, uncut, 44gr.
BBB, 5mm no picture unfortunately, 2gr.
Elite Custom, x2, 85gr.
Shimano PD-7900, 251gr.
