You can opt for a cheaper yet reliable aluminum rim from Stans and lace it with a nice hub and still end up with a great and lite wheel.
I have used and recommend:
Stans Alpha 340s - 385g, 17mm wide (also works well with road tires)
If you want to go bigger
Stans Iron Cross - 385g, 20mm wide
For my next disc wheelset set I'm going to go handbuilts - Velocity A23 tubeless rims (non-machined) on whatever disc hubs I have available - maybe the Hopes, maybe not, we'll see.
For factory wheels, Easton have just shown their new EA90 XD disc wheels at Eurobike see

Spaim D-l;ight spokes could be a good choice, alternitively just sapim race will do the job well.
I'll be running tubeless, with Continental Cyclocross Speeds.
