Fit is dialed in. Cant see myself going any lower or longer. Dont mind 5mm increase in stack if its a result of going to a larger size. Read here and reviews that SL7 has same geo as SL6 (although stack and reach numbers on paper arent the same), which has shorter reach and stack, as well as seat tube length than SL5. The SL7 (and Venge) reach/stack omit the obligate ~1cm spacer. I was initially confused too. Once the spacer is included, the effective reach/stack will be the same as on the SL6.
That is also a borderline amount of seatpost. I would lean toward the 54cm.

What are the general recommendations for saddle angle? UCI rules were 0 degrees for a while, but what's best for aggressive riding position on road and/or gravel?

Start with a neutral/flat position.
Tilting the nose of the saddle downward is a quick/dirty way to alleviate perineal pressure, especially for people with good hip flexibility. As long as you aren't shifting your weight onto your hands/arms, it's fine.
I can't think of a good reason why someone might tilt their nose up past neutral.

The longer the torso, the more reach you need. Standover clearance and such don’t matter as much. Honestly at 6’7” you should start considering a custom frame or at least look for brands that still make 64cm frames.

What is the consequence of too low stack? I mean if you have the reach right so you don't turn your shoulders forwards to compensate for too much reach and overload your neck and upper back muscles..? What overload would you feel due to slightly lower stack? Thank you.

How should I be thinking about converting a road bike fit to a XC bike, ultimately to determine stem length? Here is the scenerio, my Factor 02 VAM, which fits me well, size 56 and looking to start a build of a new '21 Epic. The factor has a 392 and I have a 100mm stem = 492. If the Epic has a reach of 470, does that mean I should have a stem at 22mm? Seams really short?? I am sure there is something I am missing.

Keep in mind slacker HTA will change the effective stem length. You might also want a much higher stack height on an XC fit, which might allow for a longer stem.

In my opinion, you can't translate stack and reach from a road bike to an XC bike at all.
My personal fits -
Epic: 406mm reach + 90mm stem + 0mm reach bars
Road: 365mm reach + 117.5mm stem + 85mm reach bars
Both are stupid aggressive fits so that might not be super helpful for you but that's what works for me.

How much of a saddle setback as compared to center of BB do you guys run? I'm looking for aggressive aero position, where I can still put down power. I thought I had it dialed but then a friend who's about the same height and does really well in flat TTs measured his and his saddle is around 2.2cm closer to the center of bb than mine. I'm 194cm tall and measurements were taken wall to center of bb and wall to tip of the saddle. Current We're both running identical saddles as well.
Current distance from center of bb to tip of the saddle is ~11.6/11.7cm.

Thank you.. Curious, is the saddle to the middle of the bar distance about the same distance (compensating for different saddles)?

116mm is shitload of setback, but you’re also fairly tall... I’m 178cm and run 55mm of setback with a 250mm saddle, but I used to run 88mm with a 260mm saddle. I was able to adapt to either extreme without much issue, but I prefer the set-forward position more.
