Well...you kinda answered the question yourself. If navi/maps are not a priority the 510 would be the smarter option. Why not get an Edge 500 by the way? Here in The Netherlands they are about 100 euros cheaper than the 510-model.

Well 500 does not include 2 gps receivers, no connection with your smartphone, no touchscreen :)

I failed to see any additional features on the 800 that I would actually use.
So weight won out.

I'm heading to edge 510 either. Gotta search for some good prices on ebay :)

The 800 doesn't have many of these features, either. The 810 gets you the maps, touchscreen and connection to your phone, but only the 510 uses GPS and GLONAS (however, my 810 has never given me GPS connection issues, so that's not an issue for me).

Madone 4, Cobia. I own a lot of Treks.

I run the Edge 510 and it's been solid for me so far, make sure to update the firmware before you use it. On my first few rides I had GPS connections issues, after the update it'll pick up the GPS in my house or garage before even starting.

I was perfectly happy with my 500 until my eyes got bad enough that I couldn't read the smaller numbers anymore. Got an 800 and it solved that problem. So display size matters sometimes.
My favorite components are the ones I never have to think about.

the GPS+GLONASS chip is really, pretty awesome. a pity they didn't put it in the 810.
