Looks like a standard Grail to me. It's the obvious choice: Racy, with 42mm tyre clearance.

Kopecki was on a Crux with 38 mm Pathfinders.

I fear we have to get over it. Less and less pros are trading backpain for a minimal loss of watts.

Van der Poel’s wheel setup was interesting too. The Dutchman is riding what looks to be a ‘frankenbike’ wheelset built with Shimano Dura-Ace hubs, and totally blank, unbranded rims. Currently, the only high-end gravel wheelset Shimano makes is the GRX Carbon wheels.
The rims on MVDP’s bike looked deeper than these 32mm GRX rims at around 40-50mm. Common sense tells us this is one of two things - a non-sponsor custom build wheelset, or perhaps an unreleased wheel from Shimano.

Or simply the road bike with slightly larger tires. I believe the riders have to mitigate between the sponsor's wish for marketing and what is quickest. Overall comfort, handling, etc. all goes out of the window when speed is concerned. Those roadies don't even use allroad bikes when taking on Paris-Roubaix.
Nevertheless, I think such an event is about winning and not having fun primarily. Thus, if you want to enjoy such trails, still a dedicated gravel bike is best.

Latest trends in bike fit are definitely longer stems and more spacers. Main idea is opening the hip angle while keeping you just as aero. Generally goes with saddle moved forward (basically whole body shifted forward) to increase glutes engagement, and sometimes shorter crank to help with the 12pm knee angle, and try to have a verticale force vector at 3pm... lots of changes in the recent 3 years in bike fitting. In his case I have a hard time imagining him preferring a less racy, heavier bike with clearance he didn't need. But not impossible, especially considering the chance of bad weather.
