They have Ultegra level 46/36 rings. You can just swap out the inner ring for a 39. The outer is the only special ring.

Where have you seen Ultegra R8100 level "cross" 46t outer rings?

They occassionally pop up for sale on eBay, but DA-level CX rings are generally pro-only. I had a set of DA9000 rings, which I recently sold. DA rings are just Ultegra rings that lack the annondizing or are annodized to look like DA rings. They aren't hollow, like the larger rings, either.

Also, it doesn't look like Shimano has released a set of 46T rings for 8100.

You should be able to run R8000 rings/crankset with the 12 speed chain until they release the R8100 version.

Is this established? Will the new 12s stuff work with 11sp chainsets? I'd be interested in running a GRX 48/31... (or even 46/30)

I've been running the 12sp chain for years on an otherwise 11sp drivetrain. Works fine.
