I've found the DT swiss grc 1400 but the terra evo are 240grams lighter

Is there any other option I haven't discovered?

You can build something light with LB or Nextie rims:

https://www.nextie.com/new-gravel-clincher-NXT27GR30
would it be better/lighter than the terra evo?

I second the (reputable) Chinese wheels route.
I got a set of 650B wheels from Farsports. DT Swiss 240 EXP hub, Sapim CX-Ray spokes, SRAM XDR = 1226 grams for the pair.
Also way cheaper than the big brand names.

Most of the big brands have a free repair or replacement policy for their wheels. IMO that is quite important when choosing off road wheels.

I totally understand, but I haven't had any problems with the Farsports wheels for the 2 years that I've had them, and I've taken them beyond the average gravel terrain. I come from Enve and Zipp wheels, but I wanted to try out these Chinese wheel manufacturers. Admittedly, I was prepared for the worst. The cost was a half, to a third of the price compared to the equivalent (weight) wheels from the larger brands and fortunately their performance has been on par.
I think some of these Chinese wheel manfacturers have come a long way with their products. And the big brands know this, hence the more budget-friendly offerings from them in recent years.

I built a set to 1120g with DT240EXP hubs, you could easily be in the high 1000g range with less spokes (I built with 28/28) or lighter hubs. They held up fine through some big hits on some fast fire road descents in a race. I have a front fork though, maybe not wise without some suspension.

I ended up going with the enve but the overall weight is still high, need to find lighter tyres and a lighter cassette
