Enigma Escape Build

Hi, I'm building an Enigma Escape, but need some help on cockpit ideas. This was supposed to be done cheap but is quickly turning into dream build.

This will be used as a allroad, adventure, gravel, winter steed, commuter, kid on back bike. I reckon 80% of time will be tarmac in winter, so looking for cockpit which helps here, but also allows me to keep up when i do gravel / single track riding. I think (correct me if wrong) minimial flare bars and stiff stem will be best?..
