It's simply too bad that Shimano has only 11 speed GRX groupsets. Therefore I personally would not be able to cope with 1x setup. The range is simply too small. You either optimize for low climbing gear of choice or for speed on Tarmac and descends. Can't be good for both. Maybe on 12s in the future. So untill them I would go for 2x.
And I don't want anything from sram so it's done

Same RD, but 28/42 up front and 11-40 with no issues. It's not brilliant with a 42T rear (when I was running 10-42 on another wheelset) as it didn't like shifting doen fromn the 42.

mannn after trying 11-40 1X on my CX/Gravel bike TWICE, i decided to go back to 2X and I'm stoked.

the 1X was just grindy and draggy no matter what i did. tried different chainrings and even took a dremel to the wide teeth on a garbaruk 1x 12-speed chainring. it just never felt right. on the quicklink you could even seen some pretty righteous gouge marks on the inside of the plate. just draggy. i don't notice it too much on my 12sp 1x mtbs for some reason, but just couldn't come to terms with it on the gravel bike. not to mention the wide gaps between gears.

for offseason, i've got a wickwerks 42/34 chainring set up front w/ a 11-40 XTR rear and a GS Ultegra Di2 rear derailleur. the 8050GS is rated for 37T of wrap and this comes out exactly at 37T. im using Specialized's direct mount derailleur hanger (sold by Wheels mfg IIRC) with the B-tension screw alll the way in. I had to remove my 12t Extralite upper pulley and go back to a shimano 11T Guide pulley. this gives just enough room. wrap still seems decent on smaller cogs. not ideal, but decent. shifting is good. i can go big big on a 110-link chain w/ 425mm chainstays with no problems. now i have a super low 34/40 for a low gear and the ability to switch back to a lighter, tighter 11-30 DA cassette for race season (boy they got ^$^% expensive). STOKED.

I will... I started 2x and went to 1x and honestly 2x is better for me. I'd like to keep my XTRDI2 rd.. just honestly have had no time to fiddle with the XTR Fd

Hmmmm. These last few comments are concerning for me. I'm going to be switching over to 1x soon (42T - 11-40) from my 2x setup with 48/32 and 11-34. I hope I don't regret it.

It's not for everyone. Just do you're own thing and see if you like it.

For sure. I've had too many issues with FD chain drops and this will by my stopgap to get me through until I can spring for an AXS XPLR set up with a 10-44 cassette. That'll give me all of the range I had previously only with a 1x set up. Having to shift to the bottom of the block and really go easy on the pedals to avoid a chain drop during an upshift really kills the momentum. Plus, with my set up, I had about a 50/50 chance of sucking the chain to the point where I had to remove the crankset to free it up. That would be a major bummer in the early parts of a long gravel race.

Plus I'll save ~200g with the swap, so that's always nice.

I am running 46/30 up front with 10-42 on the back on a GRX di2 Factor LS. Lots of mountains around me and every now and then I take it on the singletrack to practice my skills a bit. No issues with shifting at all. No issues with the chain and have even pushed it in the big big every now and then.

I went SRAM 1x on my new bike after going back and forth a bunch. I love it and don't miss 2x at all. I've only had Shimano in the past so the biggest issue for me was just getting used to SRAM.
