These are the wheels I used for Dirty Kanza last year and I'm getting them set up to do a 200mile race here in Colorado in about a month.

Tune RR Skyline Disc wheels w/ Prince/Princess straight pull hubs. IIRC 1150g
With tubless tape, valves, 9 ti rotor bolts and BrakeForce One 140mm Tuned rotors 1360g
Panaracer Gravel King tubeless 38mm tires ~330g each.
Dura-Ace 9100 11-30 Cassette 211G
~110g of sealant

Total 2340g

Tuned rotors?

A 584 based wheel could come out lighter in theory, but that also depends on an equally light rim being available
it's actually possible to come to the conclusion even before realising it makes no sense at all

My 1139g cross country wheels have been perfectly durable taking a pounding that no gravel bike could ever dish out.
LB Flyweight rims
Carbon Ti boost straight pull 6 bolt hubs
CX-Ray spokes w/alloy nipples (28)

They could be under 1kg with Extralight hubs and Berd spokes.
