Does anyone know the weight on a 700c wheelset with Ultegra hubs laced to Mavic Open pro rims?

with 32 spokes front and rear, dt 15 gauge weighs 1825g

What do you expect from heavy ultegra hubs and 32 15 gauge spokes? Most of the wheels weight is in the hubs and spokes, rim only weighs 425g

btw. what are 15 gauge spokes? 2.0/2.0/2.0 ?? If that is so they're indeed very heavy. Must be so at 1825 g a pair.

15 gauge spokes are 1.8mm
14 gauge spokes are 2.0mm

The gauge is the British wire gauge standard so the gauge numbers don't match the metric 0.2mm increments, 13g is 2.34mm, 15g is ~1.63mm and 17g is ~1.45mm.
