11 spd is probably out because Sram only wish to support 12*2.

An AXS 12 speed RD won't work with 11 speed, but an AXS FD might. In theory you could buy a new A2 11-speed RD and run it with AXS shifters and FD on an 11-speed drivetrain and have current tech 11-speed wireless shifting with warranty. I will be testing this very combination shortly with a Rival AXS FD and Red AXS shifters in place of my Red eTap ones.

The RD is the master control unit and nowhere does it say an AXS FD can pair with an A2 11-speed eTap RD.
No, THY is correct and AXS FD will not pair with an 11 speed RD. I was erroneously thinking that derailleurs paired with shifters, but all components pair with the RD, which is the master.
The AXS FD would need a firmware update, much like the AXS shifters have just had, to be compatible with 11 speed. I think it's unlikely that SRAM would release such a firmware because the physical dimensions of the AXS FD are probably not optimal for 11 speed. We can hope SRAM release an A2 version of the FD like they have for the RD, but you have to wonder if there is a business case for doing so.

So basically if anything goes wrong with an 11 etap F derailleur then you have completely bricked the entire grouppo?

It means you need to find someone to sell you a used FD (or NOS) or run 1x, yes. There might be a slim chance that SRAM unlocks legacy pairing on the FD. I wouldn't necessarily count that out. They're in no danger of cannibalizing sales and that would be a good way to keep older groups serviceable by rolling cross compatibility of the previous generations when the new-new comes out.
