Exactly. I'll put the components I like on and enjoy it. Weight is just something on the side that I like to mess around with :D.

I was considering an Alptitude saddle, I currently have an S Works power saddle so only a tiny bit of weight saving. I'm too heavy for the Nano pedals sadly, mid 80's.

I had a specialized power mirror before and now run a Selle Italia Boost SLR, 70g lighter and fits my rear end even better. Perfect saddle for me.

Nice! Saddles have always been trial and error! Getting on with the Power for now... I did really like the Aeolus and Verse from Bontrager too.

New Zipp 404 incoming... I do think its a tiny bit lighter but not by much. But at least my wheels are matching now :D. I have some Galfer rotors on order... just tinkering away.

I ordered a slr 58 framekit for me and my son in Trek Segafredo Colors.
I don't like the massive reach of 100mm for one piece bar stem combo aeolus rsl.
can you advice me what's the best proper bar and stem that is light but also hide the cables in the best possible way.

You could ask Flatlandclimber, he seems to purchase lots of stuff, so my guess he would be able to give you an advice.
If you have lots of money to burn, Enves new integrated cockpit might be ideal?
Otherwise perhaps Vision tech have something that suits you?
But as mentioned, check with Flatlandclimber.

I've been looking for similar options since the RSL integrated bars are too long for me and I don't like asthetically how the bars sit on the spacers especially when you need a stack of spacers. I found pictures of an Emonda with Deda Vinci bar and stem that look very clean. It has a weight penalty of around 130g-140g compared to RSL bars but might be an option for those that need bars with shorter reach.

I also saw an Emonda with FSA Vision ACR stem and bars while it doesn't look as good as the Deda Vinci set-up still looks better than RSL (in my opinion) and again gives shorter reach option.

I'd be interested to hear from anyone who has installed any of these options on their own Emonda and what was invovled, e.g. do you need headset bearings/expander plug from Deda or FSA to work with specific spacers/stem from Deda/FSA.

Technically that frameset is still for sale in 2021 as a "2022" model.

For the record, I weighed my 2021/22 Emonda SL5, size 56, 500 OCLV, Blue/Blue Smoke paint:

Frame (bare, no headset parts, no thru axle, etc.): 1218 grams
Fork (bare, no expander, no thru axle, uncut): 419

Not that impressive, but whatever. Lighter than my 2016 Giant Propel (rim brake), about 200g heavier than my 2013 Giant TCR advanced (rim). Makes the Emonda SLR attractive, but I'm too cheap to spend SLR money.
