Any suggestions on my choice for the Ultegra? Dura is lighter but comes at quite a price penalty. Plus, I'm not too sure I want that light Dura cassette made of Aluminium butter.

I use ultegra k7 for training and dura for best wheels and competition. Have you though of a different saddle? You could lose 100 grams.

You might be able to save some weight on the cranks, while keeping to Ultegra RD/FD.

Bad sealant choice, too high of a pressure or a shitty mechanic. Probably a combination of all three.
