I’m getting my bike repainted later in the year, I’ve decided 100% I’m going Saeco, black bar tape, seatpost, saddle etc.
Spiderings, Mavic cosmic or 55mm black carbon clinchers.
I’m not 100% on the exact colour though, I was sure about the Caad7 dark red but the Evo here with Cosmics has caught my eye.
Any suggestions?

The bright red and yellow is the classic Saeco livery, IMO.

The finish on the Caad7 is created using a kind of tinted clear coat, so in certain light the metal underneath shines through. I don't think it would be possible to achieve the same look on a carbon frame so I say go for the classic bright red with yellow writing.

Yes, this is possible with carbon fibre. They first put a chrome layer on the carbon, then a transparent color layer. It's heavier but possible.

IMHO, the dark red with metal shining would be greater and more subtle comapred to the 'loud' red.

The first red used by Saeco on the Caad was more bright and "plain".
Then in the latest years they used the dark red like in the first picture you posted.
Personally for a supersix for I would go for the same color as the first picture just cause the colour is a bit more "elaborated" but at the same time I would try to replicate the decals.
Black fork would be a must.
But we get in a very personal area which depends on what you like as you're gonna ride it, for example, would you do stem in same color as the frame? Would you opt for an old Cinelli Ram? And so on.

We repainted my brothers CAAD6 (back when Cannondale only did Alu) in a tweaked version of the top image - extended the red onto the top of the fork and did gold edging on the decals. Paint was a proper candy not the tinted clear. It came out far better looking than the team bikes of the time.

Now that I'm older and nostalgia bites a little more deeply it would be the proper Cipo colours in the 2nd image.

I’m leaning towards similar to the bottom one.
Bright red with yellow decals, black finishing kit, yellow accents on the mavic wheels should make it pop.

I’d be happy with any of the above and I’m happy for the painter to add any touches he feels would improve it.
I like the black-red-yellow colours together.
