Depends, some oils will dry out, the lighter fractions evaporate leaving a gummy/waxy residue.
Some don't. I've not tried leaving many oils on a chain for months.
You'll also accumulate dust.

Just relube, wipe down the chain and then go ride. You don't have to over think this.
