Stevens Comet Disc 2019 + Campa Record 12

I have read a lot in this great forum, and I want to present my fall/winter/spring project for 2018/2019.
What I want: Campa 12 with Disc (-> why: owning a campa bike is on my lifetime todo list), and Disc because I like Disc and the brake performance of my current bike (Stevens Vuelta 2012) is not great.
Since I want to stay with Stevens, and the frame is rather affordable and I like the styling (not everybody sees that it is an expensive frame), the choice will be most definitely the Comet 2019. Unless, they change the looks from 2018 which I do not believe.
The other goal is to get a sub 7kg, so I am planning to buy Campa 12x Record, but will use the SR crank saving another 100g.
Handlebar is already bought, got a very good price on the 3T Ernova LTD Stealth handlebar.
Since this is my first custom bike project, I am happy for any pieces of advise.

I would ask, does it handle wider tires than 25mm?
I see the fork is 1 1/8 - 1 1/4. Usually forks are 1 1/2 when it's disc brake.

They claim 28mm, I will stick to 25mm most probably anyway.
What just came to my attention: is it complicated/dangerous to dismount the hydraulic cable form the brake or the lever? The Ernova has integrated routing so this must be done.
Update: just found the official Campa Video, it seems easy with the correct tools.

Geez, that is one sweet-looking build. Congrats.
I was just checking out the Stevens road lineup and they actually came down in cost while
reducing the weight and keeping the handling and performance of their Comet, Arcalis, et al.
I have had mostly Italian frames (Moser 666 was one of the best), Kuota Kross (cross events), but my go-to is my custom-built
Pellizolli-crafted Aeta with Columbus XCr (stainless steel tubing). Campy Record 11-speed (2011 frameset) and is only 16.5 lbs with
Keywin (New Zealand-produced) pedals.
