Does anyone know how much an Ultegra R8020 disc groupset weighs? And how it compares to Dura Ace and eTap HRD?
I was planning to buy a Cannondale Synapse Ultegra 2018, keep the frame and groupset, then replace the Aksium wheels, chainset and finishing kit, which would save about 900g. But my LBS weighed the complete bike at 8.885g in a 56cm! So I'd struggle to get it under 8kg even with 1400g wheels and an SISL2 chainset...

The LBS have told me that the Ultegra R8020 groupset weighs around 2500g, whereas Etap HRD weighs 2361g.
I've seen a couple of reviews of the Synapse Hi-Mod eTap and Dura-ace bikes, with both weighing around 7.25kg. With the extra 200g for the non-hi-mod frame and 150g extra for Ultegra, that should mean that a c7.6kg build is possible, which would mean trying to save 1.3kg on the out-of-box Ultegra bike...

I believe I read somewhere when I was researching the difference was only about 250g - but that was probably just the caliper brake version. The weight of the Synapse frame itself will make this a bit of a challenge. I just built an Emonda SLR with R8020 and HED Ardennes (~1570g) wheels, Fizik aluminum bar/stem and it come in at 7.55kgs.

Is that the sub-700g frameset?
