Because Shimano do so.
Except first generation of di2, the di2 shifters since 10 speed Ultegra 6770 is compatible with everything, officially or not.
you can keep using 6770, 6870, 9070 shifters on the current generation Ultegra and Dura-ace di2 with just firmware update.

I think that's a pretty realistic scenario. But.... what you won't be able to do in firmware is update your rear mech to be able to shift a huge cassette. So for 1x12 you'd still need a new rear mech, and SRAM might not even offer 2x12. It might be 1x12 or 2x11.

The shifters shouldn't even need a firmware update. The logic is all performed in the rear mech. All the shifters do is broadcast which button is being pressed - AFAICT there's nothing 'speeds' specific about them.

If only di2/etap/eps could be hacked and simply set up to run any indexing then you could do what you ask.
