Our leg length is very close and I ride Pinarellos in size 51.5 ... My inseam is 81.3cm and my height is 172.7cm. I have 2 Pinarellos ... Dogma F10 and FP Quattro. I have been professionally fit on both bikes. In every professional fitting, my saddle height has come out to 71.7cm.

I believe the F10 geometry is identical to the F8. Here is how both of my bikes are set up:

Dogma F10 Size 51.5
Most 100mm aero stem (-8deg)
10mm spacer on top of stock conical cap
Enve compact road bar

FP Quattro Size 51.5
Enve 100mm stem (-6deg)
6mm spacer on top of stock conical cap
Enve compact road bar

Based on your measurements, I would think you would ride a 51.5 with a stem a little longer than what I ride since your upper body is taller. I am happy to send you a photo of the F10 so you can get a look of how much seatpost is showing ... if that aesthetic is important to you. Good luck with your purchase. -Glen
