Due to the lack of every single Shimano rotor on the market, I'm now building bikes up with the MT800 (XT) discs.

I'd say RT-MT800 is one of the most practical rotor in Shimano line up. It's right at the sweetspot of stiffness, cooling, weight and cost.
Too bad it somehow perceived as even lower tier than Ultegra rotor by most roadies.
BTW: do you have any test result for Galfer yet?

Thought I'd chip in with a contribution from Galfer. I was putting new wheels on the road bike and wantd to replace the existing Centerline X that I had. Given that the Galfer rotors are lighter and cheaper than the alternate options I gave them a punt. I've been running Galfer pads for the better part of a year and prefer them to the SRAM options.
First ride impressions were that they look better than the Centerlines. Seriously they look great. On new pads in the rear the modulation and stopping is fantastic. I've got a half worn down pad in the front and thought it was lacking a bit compared to the Centrlines. Not by much but enough to notice. I'll update this post once I change the front pad to a new one.

cross posting this... but PSA on ExoTherm 2 SwissStop pads - these are good pads with good feel and nice bite. BUT they put tons and tons of heat into the fluid. on >15% grades, if you're not careful, the lever will start creeping to the bar - at least with shimanos & mineral oil i've never run metallic pads, so maybe this is SOP for metallic (i think these are a hybrid though?) BUT it's very unsettling compared to Shimano Resin. On one hand, there's more power, on the other hand, that heat has to go somewhere, and the pad material seems to do a great job of conducting it into the fluid. be careful.
I'm using the same green compound with the non ExoTherm backing and haven't experienced that issue. Even with 140mm rotors front and rear on fireroads where I am dragging the brake down steep grades for long periods of time.
I really like the compound though, feels more powerful than L03As IME.

Bear in mind he weighs around 90kg and hills and mountains in HK are really, really steep.
Plus I'd guess heat and humidity assist with the delamination - a bit like Hollowtech cranks ...
Anyway, I've heard enough stories about IceTech coming apart. I don't think his experience is that isolated.

Judging by the different colors on the braking surface of his xtr rotors, it looks as if it was only used partially. I sometimes smooth out the brake pads with sandpaper on a flat surface when they are contaminated. Combine this with 100kg system weight and steep descents, this could certainly lead to more wear.
