Newer bikes that dont weight a tonne?

Looking for thoughts and opinions on this, here is my situation.
I currently own a 2016 Canyon Ultimate CF SLX, Sram Red 22 and in my XXS size it comes in at around 6.4kg total. As you'd expect I'm a small rider, 5'5 and 64kg.
It's light, a fantastic climber and I've put many, many happy miles into it, but I've finally had it with the Sram double tap, I've always hated it and just put up with it (Yes I know I could of switched to a shimano system, but that just didnt happen).
I'm now ready to buy a new bike after all these years. I dont want to build from scratch, I DO want di2 or etap, and I'm pretty sure that whatever I get is going to come with disc brakes so theres not much choice there anyway. I know this new bike will weigh significantly more but I'm really keen to at least keep it under 8kg whilst I chip away at replacing some of the heavier components.
I struggle to find second hand bikes in my very small size, they're rare as hens teeth, so I'm looking to buy new.
What's out there that fits the above requirements, isn't bloated, that also wouldn't go over £3000?

I'm not sure you'll be able to find a new bike that has Di2/AXS that's sub 6.8kg for that price, but your small size needed will help. Bikes in that price range typically come with heavier "grade" carbon frames/forks, wheels that are boat anchors, and things like heavy saddles, etc.
You may look at the Giant Propel or TCR or the Canyon Ultimate as they seem to be some of the lower priced options, but new bike prices have gone through the roof since COVID, and even though demand has dropped off, prices seem to still be pretty high.
It looks like Canyon has a Ultimate with 105 Di2 for $3700 USD which should be about $2,900 GBP but it's 8kg (guessing in a L).
Another option might be to change the groupset on your current bike out - as I think you can find pretty good deals on used rim brake groupsets. Find a good deal on Dura Ace 9100, maybe even find a set of cheap eeBrakes to offset the weight (Red 22 was insanly light) and you've got yourself a "new" bike.

I was thinking it's probably going to be Canyon again, as they do seem to be very competitive on price / weight etc, I was maybe hoping some other brands that I'm not aware of might be good options, but my god they are expensive!
I've also edited my first post as I forgot to mention that I've already consigned myself to the fact that with this budget, I'd be lucky to get anything under 8kg! I havent ridden any other bikes in so long that I'm curious about how a newer heavier bike will "feel", and if the weight penalty is worth it for "aero" gains.

I managed to go <8kg on slightly under that budget on my Merida Scultura here:

but that started with a great deal on the frame. I think it's doable, but if you get a full bike with 105 Di2 / Rival AXS, budget on replacing the wheels, tyres, seatpost, saddle, stem and bars and that will probably get you to <8kg with some lightweight choices. Rival cranks are super heavy and previous gen Red is a great upgrade if you're lucky to find one second hand.
Like you, I was previously riding a lightweight bike with mechanical shifting (2015 Focus Izalco Max with DA9100, 7.1kg) and I'd never go back - the Focus is on the trainer now. Ride quality on the Merida with 30mm tubeless tyres is so significantly better and have pretty much beaten all my previous climbing PBs despite a heavier bike. Plus I never have to worry about melting rims if I'm stuck behind a car.

If you are going to change parts out you might as well do a build. I imagine geometry is pretty particular at your size as well, which makes stuff like getting the right stem/bar combo right for example. Budget to have a shop put it together and you should be good.

Just had a look and Merida must be one of the only brands that still publicise the weights of their bikes! Seems like in my size the stock build would come in at around 8kg, so plenty of room to trim the fat! My stock size S (I assume you'd be XXS? Merida sizing is similar to Canyon) came in at 8.8 (with Ultegra pedals). I think coming from a pretty light 6.3kg bike I'm slightly nervous about the weight gain, but everyone I speak to about this says it's just not an issue when taking into account all the other benefits.
