Isn't a part of those spacers a requirement to run the cables internally?

It's short to me but isn't this the specialized way? They ship a 56 SL7 with a 100mm stem. They think that works for most riders.

That's the standard stem length for most manufacturers size 52 I think.

I think 90mm is more common for that size. SL7 in 52 comes with a 90 according to the Specialized site. same with Trek and Canyon.

do a lot of pro teams cut off extra seatpost to save weight?

Cannondale and Specialized at least used to ship their 56 frames with 100 and 58 with 110 stems. Bianchi’s been shipping 120 and 130 with comparable frame sizes.

Specialized site says 52s came with a 90mm stem for the SL6 as well.

Canyon's come with pretty long top tubes, so they often spec a slightly shorter stem than other brands. Difficult to compare between brands.

Since when have stock complete bike stems been a consideration in pro bike fits?
Just check out the Trek emonda thread where some riders are shown riding 140 -17 cockpits that aren't even available to the public. My point was that the rest of the marquee riders are running more aggressive front ends and that was about it.

I think the most aggressive setup I’ve seen is Lizzie Deignan’s worlds winning Tarmac. 47 frame 13 cm stem.

8.14kg for Wout van Aert's Cervelo S5! Most pro aero bikes don't seem to be on 6.8kg but that seems really heavy to me....
