My personal preference is PNS and Café du Cyclist.
The thing with a logo is that the design/font/kerning of that logo, while highly subjective, ultimately determines how one feels about it being plastered everywhere. If “well designed” then I’m less bothered by its inclusion than when it looks like something designed from clip art in a Word document.
The other thing for me, specifically related to PNS, is that I actually appreciate the inclusion of a logo when it acts to break up what would otherwise be a flat block of colour on the back of a garment, potentially aiding in visibility for drivers, especially when reflective.
In terms of fit/cut, I get on well with both PNS and Café du Cyclist, though the former is definitely more compressive in nature than the latter. I bought a PNS Shield jacket this year and the cut across the chest means that when standing I can’t actually relax my shoulders. Makes sense for riding, but when off the bike I need to undo the zip.

Just to point out that La Passione are Italian, not French.
On their kit, I have some of the older stuff but none of the new designs are doing much for me.

Look at Pedal Mafia Pro and Tech lines, minimalistic logo.
Think I need to revisit Santini and maybe even Assos. Santini has some really nice bordeaux jerseys and bibs that look to be blacked out. That's definitely not the image I had of them in mind Will instagram tonight, see how they look in person.

Maybe have a look at Search and State, and Brandt-Sorenson, too. I really like the Bernard stuff, but it's pretty logoed up.

Otherwise for something more exotic there's Gobik and Tactic from Spain.

Pearl Izumi elite pursuit spd jersey in fluro blue is my go-to for summer. Breathes just as well as any open mesh jersey, washes superbly and it's got UPF50+ rating:
