Easy.
Go lightest possible build. It's an Aethos. It's not just aerodynamics, the shallower wheels on a WW build just makes a lot of sense.

You can also experience the difference in handling and feel since you already have deeper wheels.

Besides, Aethos just looks better with shallower wheels and if you're concerned with aero than this setup ain't it.
Go pure. You won't regret it.
Redundancy is pointless.

If you want to be faster go deeper. It's proven in wind tunnels and backed by math. It's not even a debate even though people will try to debate it.

On the other hand, if you don't care and just want your Aethos to feel light, then go light. But these days with carbon spokes, you can find 1300 gram deep or mid-depth wheels so you can have your cake and eat it too.

Go by the looks . I prefer mid depth wheels on non aero frames. Don't like skiny tubes with aero wheels. But everyone has its own taste. choose the one that will look best on this frame

+1 to AR25. The Aethos has to be as light as possible. If you need top crusing speed, ride the other bike.

I actually prefer a mid depth wheel as well on carbon frames, shallow wheels for me look best on a classic round tubed steel/titanium bike.

With that in mind, the Wheelsfar 35mm would be a good option, 100g lighter than the 50mm ones whilst retaining a bit of aero benefit as well as probably being stiffer and more resilient than the AR25's.

Never liked a random "do I have a flat on my rear?" feeling when I was riding my bikes with AR25 wheels (bitex hubs with cx-ray spokes), eventually I sold them.

I now have a set 40s Wheelsfar Hypers with carbon spokes and I've recently bought a 30mm front wheel of the same spec for riding in gusty conditions.

Never noticed any issues with my AR25s. I use them frequently on a group ride which is nothing but 10-15 uphill efforts between 20 seconds and 3 minutes long strung together.
