Looking to see what parts people are using to get disc builds under 6kg... specifically frames/rotors/calipers/hubs/groupsets

Show me what you got!

That's not very helpful - OP (and I) need the parts list!

Many of the Aethos build in this forum will be sub-6kg.

See my FM079 build. More upgrades coming soon (crankarms, pedals, front rotor, brake hoses, out front mount). Sub-6kg is easy.

This is a very broad question in general. Build it with weight weenie components it's very easy to do. I have a sub 6kg c40 from 2003. Going sub 6 on any newer frame should be quite easy to do. Start with lightweight wheels. That in itself should put you in the ballpark.

Most carbon frames that doesn't use proprietary parts should be do-able.
Few things I look for are:

-BB30
-Ability run mechanical shifting. (Force Hydro is still a great budget option)
-No stupid heavy ass seatpost. (I hate my Strada seat post)
