Endurace drop to bars

Hello, I am a 68 year old who rides 8 to 9000 km a year who is looking to upgrade from a Jamis endura comp to a Canyon Endurace CF SLX 8.0. My quandry is that I am 185 cm tall with about 83 or 84 inseam and so fa :welcome: ll between a m and l size. The Jamis is a 58 that I always felt was too long in reach (LBS put on a 100 cm stem to comp) and not enough seat tube out as well. My question is how much of a drop from the top of the seat (currently at about 75cm measured from center of crank along the seat tube) to the top of the bars of the medium Canyon when all spacers are used? I probably wouldnt want to go much lower than 5cm and would probably ask for a 110 cm stem rather than 100. I really feel that I want to try a 56 size frame but Canyon stack may be too low for me to do that. (Looking at a Giant Defy Adv Pro 1 as well). Thanks
