Looks like a great build! I can't understand the white bar tape though, completely impractical even if it does look good.

Custom Carver based on their All Road but flat mount and geo I drew myself and a Lithic Hiili fork.
R8000 with Spyres and Cobb cranks but eventually going to do Rotor 3D+ 46/30 cranks and go Hydro. Kinlin TL23s laced to White Industries CLDs with Sapim Lasers with Compass Babyshoes standard casing and a White Industries headset. Easton EC70AX Bars (love these) with an old Cannondale stem I had laying around, just got a Thomson X2 to put on this Sunday. I only weighed it with lights and computer on which was 9.3kg.

It's Fizik, stays mostly white and is easy to clean with baby wipes or WD40. Most other white tapes won't work.

My pretty much stock 2017 SuperX 105.
Changes so far - 50/34 chainrings, WTB Nano 40mm tyres, C2 Carbon seatpost, low stack Cane Creek headset cap, trusty old Selle Italia SLR XC and 120m Deda Newton stem.
Deda Newton anatomic bars waiting to go on sometime too.
Bargain buy on discount and I'm very happy with how it rides on and off road, and it'll probably be the bike that gets most miles on it from now on.
I have a nicer alloy wheelset, with 28mm slicks on it for now, and there will likely be a series of gradual upgrades in general in the longer term.

How did you manage your cables? Split-cables inside frame? Are brakes hydraulic?
It’s Di2 so positioned the junction box at the lower coupler so pretty easy to unplug the wires. It is hydro so I have to cut the zip ties on the rear brake hydraulic line and unbolt the caliper when I break it down. It’s not bad. Full break down and pack or the inverse can be done in 20 minutes.

Here’s my Trek Crockett. I use this bike for CX, gravel, road... pretty much any chance I can!
The full build is listed in the link in my signature, but a quick rundown is as follows:
Ultegra 6800 crank, converted to 1x with a Wolftooth 38t ring
XT M8050 RD w/ Shimano 785 Di2 hydro shifters and 785 calipers
A myriad of wheel choices, the main one being H+ Hydra’s laced to WI hubs.
