I would def opt for the Ryot55s. I have a set of Ryot77s and they are fantastic. Handling in the wind is better than my 56mm LB wheels, I would guess largely due to the blunted profile. The 105% rule does help with aero drag, but it also affects crosswind handling. When the tire is wider than the rim, the air detaches sooner, and you get a more abrupt push from a crosswind. At least that has been my experience experimenting with 25/28/32mm tires. Also agree that on flat ground weight is less of an issue, my 77s are 300g heavier than my 56s and I don’t even notice it, except that the 77s are def faster.
