I can't decide which one to go. I ride tarmac 100% of the time. I DON'T want anything deeper given that my end goal is crosswinds stability and being light and responsive. I need them to be tubeless compatible (in Zipp’s case mandatory).

Quick spec recall.
Zipp’s 303fc:
- 40mm deep, 30mm wide externally, 25mm wide internally, 28c tire which will go uo to 30mm (give or take)
- around 1350gr
- €1750

Bontrager's 37 Pro:
- 37mm deep, 28mm wide externally, 21mm wide internally, 25c tire to be within the famous 105 rule.
- around 1500gr (considering already 50gr due to rhe thinner tires)
- €1250


Note: I'm not asking lightbycicle options or any other brand for that matter. Just focusing on these two, please. Thanks a lot!

Isn't this a rather stark choice between hooked vs. hookless, max. 73psi and if you want to use 25mm tyres?

I'm okay with 25 or 28c. I've never ridden 28c tires but it does seem to be the trend nowadays.

Lighter, yes, but that's why I also wrote their price.

In portugal (Europe) they do not offer crash replacement. They just offer lifetime defects replacement - both zipp and bontrager.

Actually I'm not :)

I'm searching for an excuse not to go for the more expensive option. I've read a review from the bontrager saying they just deliver. Are not enthusiastic in nothing but for the price they are hard to criticize.

I was searching for someone saying "I've tried them both and i could not feel any difference" :D

I'm sure they are quite different wheels that take quite different tyres and provide quite a different ride feel.

As I mentioned above, I think you have to be sure if you want >=28mm tyres and <=73 psi, or 25mm tyres with >=85psi.

Work that out and you'll know which wheels are better for you.

I currently ride some low cost wheel that state to be 80psi maximum. I've always used 25mm on these and always at a maximum of 80psi (many time lower than that) so i guess I'm okay running low psi.

I have no idea how Bontrager wheels feels (ride feel) and i can only tell how 303 Firecrest rim rides.
The first things you will notice are these
1. Road buzz is eliminated to a degree i have never experienced with any other wheelset.
2. Stable feel.
3. Not affected by crosswinds.

However the rim brake version have some other design.
It's a hooked design!
It is 19mm wide internally.

Rear wheel pre-taped 897g (Shimano/ Sram 11 speed freehub)
Front wheel pre-taped 713g
Tubeless valves 3g each

Tires slide on very easy, no tools needed!
The wheels are fitted with Vittoria Corsa G2 25mm
Tubolito innertubes
Bikes:

Ax Lightness Vial EVO Race (2019.01.03)
Open *UP* (2016.04.14)
Paduano Racing Fidia (kind of shelved)
