Im considering buying a set of my mates extra wheels, and have questions based pureley on functionalty not aesthetics (as i know this will be worthy of the freaks topic thread)

DT350 QR, 6 bolt, 32 hole hubs laced to hed belgium, with the machined brake track. Would it be possible to use these wheels on a rim brake setup since they are rim brake rims laced to disc brake hubs?

I have a 2014ish Orbea Avant, that is swappable between rim and disc brakes by changing the dropout inserts. Would a wheel laced for disc brakes be able to handle the stresses of rim braking?

Yes.
As long as hub spacing is the same they'll drop straight in.
