I'm new to disc brake bikes and have just got myself a Look 785 Huez.

The total weight is 8.1kgs and i'm used to 6kgs rim braked bikes so this feels smooth but like a slug on the climbs.

Stock wheels are Mavic Askiums.

I'm looking at Zipp 302's or Fulcrum Racing Quattro's which I can get for £700 ish.

What else is out there for good valuve. This bike is my new winter bike so budget is £1000 max for wheels.

Thanks for any advice you can give :beerchug:

Look 785 huez as a winter bike? What kind of winters do you have? The dry kind.

Get some aero disc brake wheels.

Here is a roundup in cycling weekly that covers one of the wheels your looking at. Although it misses out many technical details about the wheels. For example 21 spoke front wheels are triplet which makes no sense to me from a structural point of view.
