I would ignore the sidewall values. I sometimes run my 25mm Galactiks (measured at 28mm) at 55psi with no issues.

What wheels are you running your Galactiks on and what's your weight?

Zipp 202 NSW Disc and I weigh 140lbs/63.5kg. Usually I run 62/65psi front/rear, but will bump it up to the mid-80s if I want to go for a PR on a segment or something like that.

I have run my 25mm fusion 3 tubeless (80kg Racing 3 2-way) at anywhere between 50 and 95, normally about 75. Probably even ran it at 40 when I forgot to pump it up (Don't recommend, squidgy)

As above, I'd ignore sidewall markings for tubeless. Go on feel and how much it is compressing.

Could.. you elaborate on that steering effect? I know what your after.. just how to cut the line that close is my inquiry.

Roll out testing at 180's wt shows 60/80 rear as efficient as higher psi's in my tests to date albeit w S Pro Ones.

Yes, I use the tire pressure guide Hutchinson with Hutchinson tubeless tires. You can go lower then the recommended because when you will have a flat tire and the latex have repaire it you have loose some pressure (1 à 2 bars) and you can ride on.!

With Schwalbe Pro One tubeless tires I use my own and they are 1 bar lower then the Hutchinson recommendations.

I don't like when the tires squirm / sidewalls deform too much when I brake into a corner - this is the point where I'll pump up the tires a tiny bit harder.

Sidewall says 87.5 psi min. At that pressure, the ride is definitely harsher. I've tried as low as 60psi, and on gravel, the ride is better as expected. I just don't know how I can trust the wheels/tires at that pressure if manufacturer sets the min that high.
One word of caution with Sector 28s, they are a pain in the neck to mount...

Tire mounting difficulty has always been about the mounting technique and actual rim circumference, I can put the sector 28s on with 1 hand with the ENVE 5.6 disc wheelset. As for 87psi, that's just a weird guideline from Hutchinson, I ran 3,400 mi through the sector 28s this winter around 50-60psi the whole time.
