Trying to see my options for a new to me Cervelo S5 I'm building. I'm open to not too mainstream brands. I want to stay at or above 64mm and below 70mm.
So far these are my options. What else you got? I'm open to custom builds too. It seems that everyone's sticking to 60mm and 70mm and nothing in between!

Easy even with 88mm deep tubs. I ha e a set built 12 spoke onto 12 spoke da hubs that is a bit over 1500g.
The rims on the depth you want are going to be c. 400g.
44 Cx ray spokes in the right lengths will be ~190g
Bitex raf/rarely hubs are 300g. So that's 1300g and the cost if you get Chinese rims will not be high.

Issue here isn't finding rims that are under that weight from a tech point of view..
It's that rims in these depths seem to be scarce and the ones that exist are heavy. Mostly cause a lot of manufacturers seem to move away from tubulars (DT Swiss & Reynolds)

There are others. There is 50mm deep 23mm wide rim I stock that is 370g. The factory produces deeper as well.
