The other benefit of sram red cassette is the freehub boby remains intact.

Most of them seem to want $100aud more for the 11-28 1190 casettes.

Unfortunately with the hills i ride i definitely need a 11-28. Shame as the 25s are easier to come by and as you said $100 cheaper.

Yes more popular.. I paid the least for my 11/26.. 11/28 was the most then 11/30 was not cheap either

Put an 11-25 1190 on something else and use a DA casette on these?

Another vote for 1190 based on weight and reasonable shift performance. I think the 1170 and 6800 cassettes actually shift better - but they're pigs. The 1190 also has the added benefit of not chewing up your freehub body (which I find Shimano cassettes to be terrible about on DT freehubs).
Dura Ace cassettes don't give up TOO much weight to SRAM in the 11//23-11/26 range but it seems to go downhill quickly from there.

It looks like I'll buy the Sram for the Obies and put the Dura Ace on the Ventoux. Now as some of you know I'm absolutely shit at bike mechanics, I have bought the appropriate tools for changing the cassettes, and looked on YouTube. So I'm confident in this procedure.
My question is once the new cassette is on, is that it, ready to ride or will the rear RD need tuning. Sorry for the dumb question, but learning very slowly.

if everything is 11-speed, should be straghtforward
with different cassettes from different manufacturers and different wheels there's scope for variation, if you do need to tweak the rd, note how far and in which direction, then for future wheel changes you can just do it from notes rather than try/test until it's right each time
keep the b screw set for 28 (with smaller cassettes there'll be a smidge more offset than ideal, but that's way better than insufficient offset!)

Definitely haven't got the knowledge or confidence to adjust the RD.
Having all Lightweight wheels and 11-28 cassettes im hoping it will be straightforward.
