Basically you want the shape of the rim+tire to be symmetrical. If you want the best aerodynamic performance at 0 degrees yaw or low yaw angles, then you do want a narrower tire and more taper on the trailing edge to maintain symmetry.
I think the manufacturers are fine with measured tire widths of 26-30mm for road race applications. This pretty much means 27.5-315mm wide rims. You’re not really going to see too many rounded V shaped deep aero wheels that are also 34mm wide rims at the braketracks. Not wide enough for gravel, and too wide for road racing.

The new Bontrager XXX wheels got "sharper" because of this. The new Campagnolo WTO got rounder, so they will be more effected by crosswinds than before (and have better aerodynamics in higher yaw angles).
The Easton in your pic has the worst sidewind properties because of the difference in drag for the leading and trailing sides of the wheel.
