Haven't seen any real-world measurements on forums for the new 30mm Pro One, nor the 32mm GP5000. It's only the last year or so that road frames have had room for these tyres. I'm running a set of 32mm Rene Herse on an all road bike. They roll fast and are great to ride, with a very small aero penalty for the 33mm measured width. I expect the new 30mm Pro One and 32mm GP5000 would be fast and comfortable if your frame has clearance for them.

I'm aiming at 32-34mm measured width (and height at this point), so there're bikes that clear that. Looking at BMC Roadmachine, but I know that Venge and systemsix will clear wide tires too.
For a second I was thinking about something even wider and getting 650b wheelset... but I have time to decide.

My 2016 Boardman Endurance SLR disc frame has a clearance of around 40 mm which should allow tyres of around 36mm reald width. Although, manufacturer has no idea about clearances and is not able to advice of the maxmium once. (Just wanted to double check with them to be on the safe side and to know manufacturer's point of view on this subject).

The manufacturer spec is to have 4mm of clearance all round. I squeezed 31mm tyres into my 2015 Defy which officially has room for 28mm tyres. I have about 2mm all round. Yeah, I'll be running slick tires, and ok with tight clearance. Doesn't need to be 4mm all around. I'm pretty sure most of the bikes designed around 28c tires (especially on wider rims) should be okay.
