I think this pic will be a better representation of the fork, perfect.
With the previous pic, the fork seems to have a 'thicker' profile.

Based on your height and inseam, I would not go smaller than 58. I am just a hair under 181 tall with an 89 inseam and use a 57 (old-school fit) and a 56 (for my Extreme-C)..
You would be best off sizing yourself using your actual saddle height, rather than a measurement. I pedal heels-down and run about a 73 cm saddle height, using the old-school heel-on-pedal method; this measure also corresponds exactly to my pubic bone height length when measuring from pedal top to seat top. If you pedal heels-up, this can affect you frame size, as it changes your saddle height by several cm.
I think 57 will give you too great a drop for comfortable and efficient riding.

Thanks. A future upgrade might be a set of polished alu Record or Chorus 9/10/11 hubs laced to a pair of Campagnolo tubular rims.
