Alya - Sub 5kg Hill Climb project

Plan is to have a bike I can race in the U.K. hills climb season and go sub 5kg! As a change from the norm for me the frame will be plastic! (Carbon fibre)
I managed to pick up the last rim brake Tifosi Mons frame in my size (L or 56) RTP for £675.. The frame will just get prepped and clear coated with hollow gold logos by Gun Control paint so shouldn't add much to the weight. I then intend to borrow bits from other bikes I have so this bike will only be rideable for the 2 month season each year.
The Darimo bar stem will be reinforced, not because I am heavy but want the stiffness, especially as I spend most of a hills climb out of the saddle..

Fork - Tifosi Mons (326g unpainted and uncut)
Headset - stock is FSA but change to Cane Creak AER 2
Expander - Carbon Ti
Top Cap - Carbon Ti
BB - CBear DUB BB86
Seatpost Collar - Carbon Ti
Quick release- Carbon Ti
Stem - Darimo IX2 (reinforced)
Bar - Darimo Elipse 38 cm (reinforced)
Seatpost - Darimo T1 loop
Saddle - Alpitude Gardena
Garmin Mount - Alpitude
Bottle Cage - Alpitude
Brakes - EE
Shifters- Sram Red Etap 11s
Rear Derailleur- Sram red Etap 11 speed. (I have both with and without clutch so will weigh)
Pulley wheels- CBear full ceramic
Crank set - Sram red DUB
Power meter - quarq spider
Chainring - Carbon Ti (size TBC)
Pedals - dura ace
Cassette- Sram red 11-28
Chain - Sram red
Wheels - extralite hubs, AX lightness 25 Tubular with CX ray/sprint spokes from Strada wheels (target weight of 800g)
Tubs - TBC but probably corsa speeds
Bolts - gold Ti ones.. TBC

I have removed the FD mount as going 1x and removed the cable guides for shifter cables as going Etap...
the stem will be slammed so can cut the steerer down a bit.
Weight for frame included rear derailleur hanger, but had bottle cage bolts and FD mount removed. Not bad for a large frame that is meant to be incredibly stiff!

Don't know what your courses are like but have you considered single speed or even simply having 3 cassette cogs with spacers? I suspect some version of those 2 would be your next best savings, especially for a dedicated race machine.

If it was for just one particular climb then I agree a set gearing for that course would make more sense, however the 11-28 red cassette should be light and tight enough for what I need but more durable than the rotor

I guess it depends how crazy light you want to go, but given your parts list, it seems like the single speed/reduced cassette would be a huge and cheap win.
If you're changing chainring sizes anyway, then why not go single speed, save a tonne of weight and change chainrings and or/rear cog as per the course.
Only reason someone wouldn't do this is if the parcours of each individual climb varies a lot across its distance, which is why i suggested the option of using a couple of cassette cogs at the rear. 3 cassette cogs instead of 11 is a good and cheap weight saving compared to the rest of your build list

Re single speed all the time spent changing sprockets, chainrings and chain length will cost far more time in lost training than it will gain via reduced weight.

Will you have a couple chains of different length to match the chainrings? That's what I did when my DH bike had different rings for different courses.
