Picked up a Factor o2 frame in great condition, and now gathering the parts to build it.

Parts purchased/owned:
- Factor o2 frame
- S-Works Aerofly 2 bar
- S-Works Power Saddle
- Hambini racing BB
- Dura Ace R9100 4iiii dual sided power meter crank
- Dura Ace R9100 brakes

To order:
- Ultegra di2 groupset

To decide:
- Wheels (hunt? Parcours? mavic? Light? Borg)
- Seatpost (Deda Superleggero Inline Seat Post?)
- stem (Deda Superleggero Road Stem)

Ignore the wheels in the picture, only there for holding the frame.

So first decision is wheels, my options:

Take a look at Caden wheels.

I went through a similar process to you last year with my BMC Teammachine and after weighing up (literally) all the options went with Caden... very happy (as is everyone else who has them).

I think I wrote them off because I'm not keen on the appearance, and couldn't find any feedback on their braking performance.
I'll take another look though! The price/weight/depth performance is mega

The Windspace do look good... but their aesthetics (the carbon layup) is a bit loud for me, the freehub is also lary and I'm worried about their braking performance.

I think the Mavic SLR40 sounds like the "ideal" rim for me, with the weight, good braking and rim depth, but the price is high and they aren't currently available.
The Zipp looks pretty similar, but similarly expensive.
Parcours Grimpeur could be an option, if the brakes are good and they become available.

I'd love to jump on the Winspace, but I'm nervous about the smooth braking track and prefer a more understated looking layup.

I had the Zip pweight wrong, that was for the disc wheels.

I've narrowed it down to:
Mavic Cosmic SLR40 (40mm deep, 1390g, £1650)
LightBicycles R45 Carbon ti (45mm deep, 1400g, £977 + import)

Both have a big weight (LB from China, import etc. and Mavic just aren't available until May at the earliest), decisions decisions.....

The Fulcrum 40C are in stock now, but are more money, uglier, and not Tubeless compatible.

My other thought is to get Parcours to build me some Grimpeurs but on DT 240S hubs, or just take them as they are!

Your frame looks like in excellent condition. If you plan on using Shimano, Factor sells direct mount RD hangers.

So no more LB AR wheels? Wider rim width works well with the O2. Aren’t they 24mm internal with?

During the winter, I was riding with Schwalbe G-One speed 30mm tires on Enve 4.5AR with plenty of room to spare. Felt more planted with wide rim width.
