I am thinking of going the same route as you, get an Ultegra mechanical and changing over time the groupset to Force or who knows the new to be released next year Shimano eletronic groupset.
It would be quite the upgrade from my Look 675 Light.
Altough I am also considering the new Canyon Aeroad and the Look 795 Blade RS, which are a bit more aero focused but also heavier.

I bought s-tubo on front (22g), and tubolito road on rear (40g) and saved something

I was doing some weight-ins on my kitchen scale

Front wheel, lb46 x-hub, gp5k 25, s-tubo, axle, red 160mm = 1025g
Rear same, cassette 11-28 red, red 140mm = 1307g
Frameset, groupset, cages, pedals, hb, computer mount, etc, saddle winter china (135g) with radar mount (45g) 4282g

Means
6614g total with wintersaddle135g and radar mount45

6569g total with saddle135g, NoRadarMount

Potential:

Seatpost yokes are 46g, i should save 22g J&L ordered yesterday

Replace my rotors, sram 118 102 = 220g / for xtr 90 105 = 195g / galfer 76 98 = 174g

save 25g with XTR / save 46g with Galfer
save 5g with saddle (back to my selle slr boost carbonio l3 vs. this china)

So from actual 6569g i can save additional 73g and move to 6496g

Exactly those yokes. (J&L from above url)

The carbon cradle is this one, but it's taller and it's not the best fit. It is around 11g, stock is 17g or so. I am not using their yokes.

Moving to Acros Mellow tape gained around 10g, but much better look and incredible feel!

Disadvantage of this mount, opposed to mine, is that it won't allow you to use even the smallest saddlebag. I am storing my tools, spare, etc. in toolBottle, but for longer rides, i move some of the stuff to small saddle bag, so i can use two bottles.

But of course the weight advantage is teasing. On the other hand, i think the proper metric of weighting bikes is - bike + bottle cages + computer mount + pedals.... while computer itself, and mounts for lights or pump are not included.
