Nice build. We share the same height and about the same saddle height (adjusting for our different crank lengths). It's interesting as it lets me see exactly how this bike's proportions would look with measurements pretty much the same as mine. It looks like you use a 110mm stem (whereas I use 100).
With the Antares 00 Versus Evo Adaptive you have to drop the seatpost ~10mm as it's a little taller than most saddles.

Have you looked into a direct mount rear derailleur hanger using Campagnolo RD-SR105? Hopefully Colnago makes a direct mount hanger that would work with your C64, RD-SR105, and super record mechanical 12s.
