Road Snob Builds a "Touring" Bike

This is my attempt at building a touring bike. Right now I'm just using it to ride gravel but next year I hope to do some extended off-road tours. She's no lightweight at 11kg, but it's not that bad considering the frameset weighs 4 kilos.
The build list looks something like this:
Frameset: Salsa Marrakesh
Shifters: 6800 Ultegra
Derailleur: 6800 Ultegra medium cage.
Cassette: 11-42t XT
Cranks: RaceFace Next SL 170mm, 42T
Wheels: WTB i19 32h rims, DT Swiss 240 hubs
Tires: Compass 44mm Snoqualmie Pass, setup tubeless
Brakes: TRP Spyre
Bars: Easton EA70ax 40cm
Stem: Easton EA90 120mm
Post: Easton EA70
Saddle: Bontragero Serano RL 128mm

Cool bike and build. You're going to love the Compass tires. How do you like the handlebars? I was thinking about getting the carbon ones for my Warbird.

The bars are definitely interesting. While in the drops you get a lot of control and comfort but they do put you in a ridiculously upright position. I also run traditional bars slammed to the tire on all my other bikes, which is probably why these bars feel kind of odd.
