All cassettes above shift perfeclty with Sram NX RD and Eagle AXS RD. I also used KMC x12 and Sram Eagle Chain, both no issues, but I would argue the Eagel chain was slightly smoother.
One thing to consider, if you are going to mix Shimano and Sram 12 speed. You need to use shimano chain if you are running a 12s Shimano Chain Ring. If, you are using the Sram Chain ring you can use almost all 12s chains excpet the shimano 12s chain.
Based on my testing, I would have no issues using a 10-45 XTR 12s cassette with Sram RD. But If I was going to go down that road, I would also use a 12s Shimano Chain ring and Shimano 12s Chain just to get all the benefits of Hyperglide plus smoothness.

Wheels, undecided, but possibly custom DT Swiss build with 240 or 350 hubs

Likely an Open Up with the Shimano 10-45 cassette and GX AXS rear although I'm yet to find a crank that is 12spd hyperglide compatible with road spacing (I'll likely raise this in the gravel forum)

Thats going to be tough. Why not just go with e13 9-46 on an XD or XDR freehub, unless you have a microspline already.
Just know shimano road 12 speed will not go microspline, they are sticking with HG freehub and 11 tooth starting sprocket. So going microspline will be very limiting for a gravel bike, you will basically have to cassette choices 10-45 or 10-51. With xd the world is your oyster lol
